Eggplant Balls

It may not be everybody's favorite, but eggplant is a great health food! It's low in fat and sodium and packed full of dietary fiber, vitamins C and B6 magnesium, phosphorus and pottasium. Want to make this wholesome veggie popular in your home? Add this tasty eggplant dish to your next meal:

  • 4 medium eggplants
  • 2 tbs. freshly milled whole grain flour
  • 1 large egg
  • 1/2 tsp white pepper
  • 1 small Italian pepper
  • 1 cup oil
  • salt to taste

Peel eggplants, quarter and boil in salted water until tender...
Combine all ingredients except oil in food processor until smooth paste is formed...
Heat oil in heavy pot and drop in eggplant paste a spoonful at a time...
Fry until golden...
Salt to taste...
Drain on paper towels...
