Banana Bread: Yeast-Free Recipe

Here's a mouth-watering recipe for banana bread ...one of my all-time favorites!

You will need:
  • 1 3/4 cups freshly milled whole grain flour
  • 1 tsp cinnamon
  • 2 tsp baking powder
  • 1/2 tsp soda
  • 1/4 tsp salt
  • 1/4 cup safflower or grape seed oil
  • 1/4 cup honey
  • 3/4 cup vanilla yogurt, rice or soy based unless you can tolerate dairy
  • 1 egg
  • 1 cup banana (about 2-3)

Baking instructions:

Process the banana in a blender with the oil and egg until well blended.

Stir in with the other liquid ingredients.

Combine the dry ingredients.

Slowly add the liquids and mix well.

Pour into a greased loaf pan.

Bake at 350° for 45-50 minutes.

Cool 10 minutes.

Preparation time: 10 minutes

Ready in: 60 minutes
