You will need:
- 1 3/4 cups freshly milled whole grain flour
- 1 tsp cinnamon
- 2 tsp baking powder
- 1/2 tsp soda
- 1/4 tsp salt
- 1/4 cup safflower or grape seed oil
- 1/4 cup honey
- 3/4 cup vanilla yogurt, rice or soy based unless you can tolerate dairy
- 1 egg
- 1 cup banana (about 2-3)
Process the banana in a blender with the oil and egg until well blended.
Stir in with the other liquid ingredients.
Combine the dry ingredients.
Slowly add the liquids and mix well.
Pour into a greased loaf pan.
Bake at 350° for 45-50 minutes.
Cool 10 minutes.
